The Experience
From April 17 to 18, chef Koji Tamura — founder of Mr. CHEESECAKE — will present a limited Dessert Omakase at Whale Club, marking the brand's first dessert omakase experience in Hong Kong. Set as an intimate, reservation-only event, the experience shifts Mr. CHEESECAKE from retail counter icon into something far more immersive: a chef-led tasting built around seasonality, texture, and the emotional aftertaste that great desserts leave behind.

Tamura is not a chef who came up through casual pastry. His path runs through serious kitchens in Tokyo and France — including Restaurant FEU, Edition Koji Shimomura, L'AS, Mirazur in Menton, and Restaurant ES in Paris. He later returned to Japan and became chef of TIRPSE at just 31, earning early acclaim from Asia's 50 Best Discovery Series and the Gault & Millau Japan Young Chef Award.
That background still defines the Mr. CHEESECAKE DNA today. What looks minimal on the surface is often deeply technical underneath.
Spring in Five Courses
The Hong Kong omakase has been designed specifically for this city, centred on spring ingredients — sakura, strawberry, citrus, and florals. Five desserts, one specialty tea, and one glass of champagne (or a non-alcoholic specialty drink). The setting at Whale Club adds to the mood: dark, intimate, polished, and a world away from the usual rush of city dessert culture.
Sakura, citrus, dairy, florals, and soft savory notes move across the menu with the control usually found in fine dining rather than patisserie. Temperature-driven contrasts. Layered aromas. Pacing that gives each course room to breathe.
